Spice-crusted Popovers

Popovers:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 4 large eggs
  • 2 cups whole milk
  • 3 tablespoons melted unsalted butter
  • 1/4 cup apple cider
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Spice Crust:

  • 1/2 cup dark brown sugar
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  1. Preheat oven to 450 degrees. Thoroughly butter either a popover tin or a nonstick muffin pan, making sure to reach all of the cracks.
  2. Combine the spice crust ingredients together in a ziplock bag and shake until mixed.
  3. Whisk together salt and flour in a medium bowl until combined. In a separate bowl, combine eggs and milk and beat until well-mixed.
  4. Add the wet ingredients to the dry ingredients, and beat until no lumps remain. This can also be done in a blender at medium speed.
  5. Fill each cup or tin until halfway full. Bake in the oven for 15 minutes, then reduce the heat to 350 degrees and bake for 10 more minutes.
  6. Remove the popovers from the oven and immediately place them lightly in the bag with the spice mixture. Gently shake it a few times, then set aside. Repeat for the remaining popovers, and serve as quickly as possible.
